So I got this wonderful little book in the mail the other day called "Recipes Every Man Should Know," by super-food blogger Susan Russo and co-author Brett Cohen. It is a small, black book that had me instantly intrigued. You see, my hubby, does not cook. I mean not even close. I left the book on the table where he usually sits to work to see what would happen. He wandered in and picked it up. Said it sounded like a great idea. Then he opened it and started reading out the names of some of the dishes: Sweet potato fries, beer bread, beer margarita, wow beer float (are you getting the theme here?). His next comment, rightly so, was about how simple and easy the recipes looked and sounded. I kept waiting for the "I can try to cook these myself," but it did not come. Instead, he opened up a can of beer and sat down to read the book. I left him and his little black book alone.
After an hour or so, he called out to me. "Let's make a deal.. I will make the beer margaritas if you make the bacon guacamole."
Susan got him in the kitchen! And the results? Well, see for yourself!
Bacon Guacamole (adapted from Recipes Every man should know by Susan Russo and Brett Cohen (Quirk books, 2010)
About 15 minutes
Makes 6-8 servings
6 slices of bacon
Flesh of 3 ripe avocados
1 medium tomato, chopped
4 scallions (white parts only) finely chopped
Juice of 1 lime
A couple pinches of salt
A couple dashes of hot sauce
Small handful of fresh cilantro leaves, finely chopped.
1. Place bacon in a skillet over medium-high heat and cook until crisp. Drain on a paper-towel lined plate. Chop into small pieces.
2. Combine remaining ingredients in a blender or food processor and pulse until chunky. Stir in bacon.
